December was all about cookies.
January is gonna be all about casseroles!
Please post a casserole recipe that will be included in BCUK's 2008 Recipe Book that shall be available for bloggers - free - once completed.
Note: I have yet to add my cookie recipe for December but will do so shortly. Once I have done this, I shall compile all cookie recipes shared by fellow bloggers and you will be able to download the recipes.

Chicken Cider Casserole
Ingredients:
4 chicken breasts (no skins)
3 tablespoons of oil
25g butter
1 large onion, chopped
1 large carrot, sliced
Half a teaspoon of thyme
175ml of chicken stock
175ml of dry cider
2 large apples, sliced
salt and pepper
3 large potatoes
small saucepan of peas
(half everything for 2 people)
How to make:
(the original recipe called for skins to be crispened on the chickens beforehand, but me being healthy, I avoided that stage)
* Add the oil and butter to a large pan on the hob on a low-medium heat
* Add the onion and carrot* and cook for about 10 minutes until softened, then add the thyme
* Add the chicken stock and cider and bring to the boil
* Add the sliced apples
* Pour yourself a nice chef's beverage (in my case it was a glass of mulled wine, bizarrely)
* Put the chicken breasts in the pan (I halved mine to get them all in) and turn down to a low heat
* Cover and gently simmer for about 30-40 minutes
* In the meantime: get husband/partner to peel potatoes - place in a large pan of boiling water and cook up to make mash; bring small pan of peas to boil and simmer for 10 minutes; appease scavenging cat with a slice of ham

*the recipe called for celery too, but we both HATE celery - add it in if you want here, about 2/3 sticks, chopped.

Here`s my recipe for MenoMama`s cookery blog..... i`d love to provide a link but i`m hopeless at stuff like that! I`m also not a very conventional cook so i`ve not really listed quantities and stuff....just chuck it in a casserole dish and it`ll be fine....trust me!
You`ll need......
About a 1lb of braising steak
2 or 3 large onions
Garlic
Beef stock cubes and gravy granules
Half a pint of guiness or stout
Flour
Olive oil for frying
So you get your beef, preferably stewing steak or casserole steak or braising steak. Cut off any excess fat, cube it up into bite size-ish pieces and fry it in olive oil in a pan with 2 onions....roughly sliced up so they look rustic!..... and a few cloves of crushed garlic (i use about 4 or 5)
When its browned, add loads of salt and black pepper, a tablespoon of flour and two crumbled up beef stock cubes which will make the gravy.
Slosh in about half a pint of guiness or stout and enough hot water to cover the meat, and bring to the boil whilst stirring. As it starts to bubble, turn the heat down a little and the gravy should start to thicken......don`t worry if it doesn`t as you can add gravy granules later on to thicken it!
Pour it into a casserole dish, stick on the lid and shove it in the oven, about 180 degrees, for as long as you like.....but no less than 3 hours to make sure the meat is really tender!
Check on it every now and then, as if it thickens too much you may have to add some more water to stop it going all gloopy and sticking to the bottom of the dish.
Taste it to make sure there is enough seasoning and stir in some gravy granules (a couple of teaspoons or so) if the gravy isn`t thick enough.
Serve it with whatever you like.... crusty bread, garlic bread......mash and green beans. Gorgeous!!!!!
* Oh and if you like you can add mushrooms or carrots or other veggies when you put it in the oven......just ad lib with whatever you like! *

Pro Tater Tot Hotdish
Minnesota is like the hotdish capital of the world. I have hundreds of recipies. They are all fattening so I don't make them often.
2 lbs. ground beef or turkey
1 medium onion, diced
2 cans cream of mushroom soup
1 pkg. tater tots
I add green beans and carrots to this as it is the most boring looking casserole otherwise. You can used canned for speed or buy fresh and steam them first. YOu can add whatever veggie you like, or none at all. I use the spicy tater tots for more zing, again a personal preference. I would put in mushrooms but our Kevin practically screams at very word.
Brown meat and onion. Drain fat.Mix the meat with the soup and then put in casserole. Place tater tots on top. Bake at 350 degrees for 30 to 45 minutes.

Pro Well here is my recipe for Cawl, a hearty Welsh stew/casserole consisting of meat and vegetables which will serve 4-6 people.
* 750g Welsh lamb shoulder or middle neck
* 1 small swede - diced
* 6 potatoes - peeled and cut into chunks
* 4 parsnips - peeled and diced
* 3 carrots - peeled and sliced
* 3 leeks - finely chopped
* Chopped parsley
* Seasoning
Place the meat in a large saucepan, cover with water and bring to the boil. Simmer gently until the meat is tender. When the meat is cooked, remove and set aside. Skim any fat off the surface. Slice the meat and reserve.
Add the vegetables, apart from the leeks, to the lamb stock and cook until tender. Add the leeks, cook for 3-4 minutes before adding the reserved meat and parsley. Heat through, season and serve.
Serve with chunks of crusty French Bread
its a fantastic recipe, i use to have it out side it was pretty expensive, thanks,, know i can prepare it at my home .
